If you can by tortillas made by hand, "hechas a mano" they are far better than those from the tortillerias. Of course tortillas from the tortillarias are better than those bought in a bag in the supermarket. Tortillarias buy and use corn flour from a bag, while tortillas "hechas a mano", are made from dry corn kernels, cooked with lime (cal), ground by hand, and then cooked on a comal.
