The pattern of fire behind the jet are what's called Mach diamonds or Mach rings. Standing waves characteristic of the engine, nozzle shape, and fuel. The exhaust and unburnt fuel is compressed at regular distances. The compression at these points re-ignites the unburnt fuel at these points, causing these disks or in some cases, diamond-shaped areas. Ernst Mach was the first to explain this.
