Teppanyaki grilling is a technique that is based upon a standard barbecue grill setup, but which allows you to cook food directly on the grill. Teppanyaki grills can be solid steel, like the classic teppanyaki grill, or lightweight ceramic, the more popular term teppanyaki is Japanese for grilled on an aluminum plate. These grills were originally developed about two years ago in rural Japan, where master cooks tossed fresh, delicious ingredients directly onto hot, cold plates in order to cook them evenly. This method of grilling quickly became popular all across the world as a way to cook food faster and more efficiently, while also improving the taste of the food.

A traditional teppanyaki grill setup consists of a large flat grill, or Teppan, with a small individual griddle on top. The griddle is usually made of cast iron or stainless steel to allow for heat to be evenly distributed. On the Teppanyaki grill itself are two pieces of wood sloped to the bottom to provide a grill grate. Flat buns, typically beef or chicken, are placed between the griddle's two sturdy pieces of wood. On the griddle, meats are placed and cooked with the seasoned bread.

Because the griddle is on the grill itself, using charcoal is a must, since the Teppanyaki chef must control the rate of heat and the distance the food is cooked from the heat source. Using a single-hot burner on the Teppanyaki grill allows the user to quickly flip certain meats without waiting for the other side to catch up. One of the best parts of a teppanyaki grill is the non-stick cooking surface. This is a very important step in maintaining a quality surface.

Teppanyaki grilling is done on a raised platform, similar to a bar, but with the grill completely above the food. The grills come with a handle for easy effortless pushing and holding. There are several different types of grills available, including electric, gas, and coal. Each type has its advantages and disadvantages, but the most popular among Teppanyaki chefs is the non-electric grills.


Since a teppanyaki grill has no hotplate or warming plate, the chef must find ways to use his hands and arms effectively. One way to accomplish this task is to utilize the metal egg rolls that are available at most any supermarket. These are usually about a foot square of marinara or sauce flavored bread dough. These are usually cooked in a skillet with olive oil until they are light enough to spread a thin layer of sauce to cover the top.

The other common method of preparing teppanyaki griddle is by using the traditional method of grilling Japanese food. Next, the chef places the food onto the griddle with the griddle turned towards the person who is cooking. Most chefs will turn their griddle so the food cooks evenly on all sides.
