Agaricus subrutilescens

Wine-colored Agaricus
A choice edible of our conifer or mixed forests, mainly in the Coastal Northwest. The odor is mild or faintly sweet. The cap has a reddish brown disk with fibrils radiating outwards. The gill start white, but change to pink and then chocoloate and the spore print is dark chocolate. It has no odor or staining reaction, but sports a persistent and flaring ring and a shaggy stalk. It can substitute for the meadow mushroom of grocery stores in any dish, but is more savory. Found solitary or in small groups. Be careful to avoid toxic look-alikes that bruise yellowish and/or have a phenolic smell.
