Heeding the advice of one website about when to harvest persimmons, "Before the birds get them" and having seen a couple with definite peck marks on them, I decided to collect the more deeply colored persimmons on my tree today. They will ripen on my counter. This is the second crop we've had from this tree and the fruit is about a third larger than those we collected last year. The most deeply colored fruit on the left is soft and obviously ready to eat. Since this is an astringent variety I know not the taste the others.
