My new Pasta dish, created on Thursday. .
A combination of V8 Juice, Water, Cooking Sherry
and Cashew Creme Sauce make a pleasing, delicious
sauce for this whole dish.
Started with an Iron skillet
V8 juice (just enough to cover surface of skillet)
Sauté Leeks, Mushrooms,
Bell Pepper several minutes
Add sliced carrot
2 dashes cooking Sherry (add more V8 Juice and a little water if needed to keep ingredients from sticking). Add
Garlic, Cumin, Ginger, Basil, Pepper
Handful Fresh Spinach
Lemon Zest or 1 TBSP Lemon Juice
Add leftovers— Quinoa, Vegs, BlackEyed Peas (or Chickpeas)
Add cashew Creme sauce (Vegan cheese) and heat thoroughly.
In separate pot
Bring water and salt to boil and then add pasta and stir lightly.
Cook until tender @10mins
Combine Pasta with everything else.
Added a little Nutritional Yeast and another sprinkle of Basil.
