They taste better than they look! I've been wanting to know how to make these for a long time. They're really quite easy:
1 egg white
1/2 tsp vanilla
3/4 cup light brown sugar
2 cups pecan halves
Beat egg white, gradually add sugar and vanilla. Stir in pecans, coating each piece. Place spoonsful on greased cookie sheet. Bake at 250 degrees F. for 30 minutes. Remove from oven and turn over and return to oven for 30 minutes more. Store in air tight container. They're shown cooling off on a rack.
These are great in a salad.
Here's an even better recipe for Sugared Walnuts:
This is one of the best sugared nut recipes I've found. They are addictive. I've used pecans instead of walnuts also. Both are really good.
Sugared Walnuts
4 cups walnuts
1/2 cup sour cream
1 cup brown sugar
1/2 cup white sugar
1 1/2 tsp. vanilla
Mix sour cream and sugars in heavy saucepan, cook to almost hardball stage. Add nuts and vanilla, mix well. Spread on buttered baking sheet, cool until set. Break up and store in covered container.
Note: Judith reports they don't dry out enough and uses her dehydrator to do that. You cold also put them in the oven on a very low heat for a few minutes to do that.
