Vermilion Parish - Perry - Crawfish harvesting

Say Louisiana, and you think of food. Say food, and in Louisiana, you have to think CRAWFISH !!!

Crawfish live in lakes, bays, rivers, muddy ditches, peoples yards, and in flooded rice fields.
Most commercially harvested crawfish come from the latter.

In addition to harvesting and processing crawfish, a side industry is the small boiled crawfish shacks that are in almost every town, providing locals with their favorite crustecean without the hassle of boiling them themselves.

Rice is planted in the spring after the last frost, and harvested in mid-summer. If left alone, the rice will re-head providing a second crop, which can be harvested in the fall. Many rice farmers flood their rice fields after the last harvest, leaving the rice stubble, so that the farm will attract and produce crawfish - which is almot a Louisiana tradition.

Rice and crawfish go hand in hand.
